Directions
Breakfast cereal:
Traditional method: in medium saucepan, stir 1/4 tsp, salt into 2 1/2 cups water or milk. Bring to a boil. Stir in 1/2 cup kasha. Cook, uncovered, stirring frequently while maintaining a gentle boil, 12-15 minutes or until desired consistency. Serve with milk and favorite sweetener.
Makes about 4 servings.
Microwave method: for 1 serving, stir 2 tbsp kasha and a dash of salt into 2/3 cup water or milk in a 2-3 cup bowl. Microwave, uncovered, on medium, 4-7 minutes, stirring occasionally until slightly thinner than desired consistency. Let stand 1-2 minutes. Serve with milk and favorite sweetener.
Basic directions:
2 cups broth, bouillon, or water.
2 tbsp butter or margarine*.
1/4 -1/2 tsp salt**.
1/8 tsp pepper.
1 cup kasha.
1. Heat liquid, butter, and seasonings to boiling.
2. In separate medium-size skillet or saucepan, stir kasha over high heat for 2-3 minutes until kasha is hot and slightly toasted. Reduce heat to low.
3. Carefully stir in boiling in liquid and remaining ingredients. Cover pan tightly; simmer 10-12 minutes until kernels are tender and liquid is absorbed.
Makes about 4 servings.
*Low fat version: eliminate butter or margarine.
**Less salt may be required if using broth.
Microwave directions: heat liquid to boiling. Microwave kasha in a 2-qt. microwave-safe casserole, uncovered, on high for 2 minutes, stirring once. Carefully add liquid and remaining ingredients. Microwave, covered, on high 9-12 minutes, just until kernels are tender and liquid is absorbed.
Kasha pilaf:
Saute 1/2 cup each chopped onions and sliced mushrooms or other chopped vegetables in 2 tbsp butter or margarine. Prepare kasha as directed above, adding the vegetables with the liquid, eliminating any additional butter or margarine.
