You Will Need: 1 egg; 1/2 cup (1 stick) soft butter (room temperature). Real butter works best. Margarine, oils or shortening products will affect cookie flavor and texture. If using margarine, use one that has more than 65% oil. 1. Preheat oven to 375 degrees F. If necessary, soften cold butter in microwave on high power 10-15 minutes. 2. Blend eggs and butter in medium bowl using a spoon or electric mixer. Add cookie mix and continue to stir or mix with electric mixer on low speed for 1-1/2 minutes or until dough forms. Shape dough into balls and place 2 inches apart onto ungreased cookie sheet. 3. Bake as directed below or until light golden brown. Cool 5 minutes before removing from cookie sheet. Yield; Dough Quantity; Bake Time: 12, 3-1/2 Inch Cookies: 2 heaping tablespoons dough; 12-14 minutes; 24, 2-1/2 Inch Cookies: 1 rounded tablespoon dough; 10-12 minutes. Cool completely before storing in tightly covered container. High Altitude: No adjustment necessary. Baking Secrets from Ghirardelli: To Prevent Excessive Spreading: Use room temperature butter (65-75 degrees F). Soften cold butter in microwave on high power 10-15 seconds; do not use melted butter.
