Cooking Instructions: Quick Soak: Sort and rinse beans in a large pot. To 1 lb of beans (about 2-1/2 cups) add 6-8 cups hot water. Bring to rapid boil, boil for 2 minutes. Remove from heat. Cover and let stand 1 hour. Drain water and rinse beans. Overnight Soak: Sort and rinse in a large pot. To 1 lb of beans (about 2-1/2 cups) add 6-8 cups cold water. Let stand overnight or at least 8 hours. Drain water and rinse beans. Cooking Directions: Bring 6 cups of water to a boil. Add 1 lb (about 2-1/2 cups) of drained and rinsed beans, bring to boil then reduce heat to simmer. Simmer gently with a tilted lid until desired tenderness is reached, about 1 to 2 hours. Salt and pepper to taste. Salt pork, ham, or bacon may be added during cooking for extra flavor. Add acidic ingredients such as tomatoes, vinegar, wine, or citrus juice only at end of cooking, once beans are tender. Note: Difference in altitude, hardness of water and product moisture may change the suggested cook time. Beans are a natural agricultural product.
