Directions

Moroccan Lemon Chicken: Prep: 20 minutes. Cook: 8 minutes. Serves: 4. Ingredients: 1-1/2 pounds boneless, skinless chicken breast; 1 large lemon; 1 pint cherry or grape tomatoes; 3 tablespoons olive oil; 1 packet Victoria Taylor's Moroccan Lemon Chicken Seasoning. 1. Cut the chicken into 1 inch pieces and set aside. Cut the lemon in half. Juice 1/2 of the lemon. Set aside. Cut the other half into thin rounds, then cut each round in half, removing seeds. Set aside. Cut the tomatoes in half and set aside. 2. Heat oil in a large skillet on medium-high heat. 3. Add chicken and Moroccan Lemon Chicken Seasoning to the skillet. Saute for 5 minutes, stirring occasionally. 4. Add the lemon juice, sliced lemon, and tomatoes, and saute for an additional 3 minutes. 5. Serve over rice or couscous if desired. You can use the sauteed lemon slices as garnish, or you might enjoy eating them.
