You Will Need: 1-3/4 cups water for rice, 1 lb. uncooked boneless skinless chicken breasts, 1 Tbsp. vegetable oil, 2/3 cup water for sauce. 1. Heat: Pour Rice into 2-quart saucepan; add 1-3/4 cups water. Heat just to boiling. Reduce heat to medium-low to low. Cover; simmer about 20 minutes, without stirring, until rice is tender and liquid is absorbed. Meanwhile, continue with step 2. 2. Cook: Cut chicken into 1/2-inch pieces. Heat oil in 10-inch skillet over medium-high heat. Carefully add chicken; cook about 3 minutes, stirring often. 3. Stir: Stir in 2/3 cup water and Seasoning Mix; heat to boiling. 4. Simmer: Reduce heat. Cover; simmer about 5 minutes, stirring occasionally, until sauce thickens and chicken is no longer pink in center. 5. Stir: Remove from heat; stir in Salsa. Serve with rice. Add a fresh twist! Add 1 cup frozen corn while simmering.
