Prep time: 10 minutes Cook time: 30 minutes Makes 8 servings. You will need: 1 pkg. McCormick Seasoning Mix for Coating Chicken; 1 cup vegetable oil, 2 1/2 lbs. Chicken parts; 1/4 cup milk or water. Crispy baked chicken breasts: Mix seasoning mix, 1/3 cup cornmeal and 1/2 tsp. McCormick paprika in a large resealable plastic bag. Dip 6 boneless skinless chicken breast halves (2 1/2 to 3 lbs.) into milk. Coat as directed. Place in single layer in greased foil-lined shallow baking pan. (Do not crowd.) Drizzle with 1/4 cup melted butter. Bake in preheated 450degF oven 20 minutes or until cooked through.

Directions: 1. Heat oil in 12-inch skillet on medium-high heat to 365degf. 2. Rinse and pat dry chicken. Pour seasoning mix in large resealable plastic bag. Dip chicken into milk, shaking off excess liquid. Add a few pieces at a time to bag; shake to coat evenly. 3. Fry 5 minutes or until well browned. Turn chicken. Reduce heat to medium. Cook 15 minutes longer, removing chicken pieces as they become cooked through. Drain on paper towels.
