Here's what you'll need:
1 tub (16 oz) of duff white frosting.
2-3 drops of green food coloring.
1/3 cup of mini chocolate chips or finely-chopped bits of a chocolate bar.
1/2 tsp. mint flavoring.
Mix frosting, food coloring, and mint flavor in a large bowl until thoroughly blended. Using a spoon, gently stir in the chocolate chips/bits. Now you're ready to frost your minty-chip chocolate cake or cupcakes!
What you will need:
First: Preheat oven to 350 degrees F. Generously grease two 8 inch round pans and dust with flour or spray with non-stick cooking spray.
Mix: Mix in large bowl, at low speed, until moistened:
Cake mix.
1 cup water.
2 large eggs.
1/4 cup oil.
Beat: Beat 2 minutes at medium speed or 450 strokes by hand. Pour batter into pans.
Bake: Immediately before placing pans into 350 degrees F oven, sprinkle mint chips over the batter surface of each pan. Using a spatula, gently brush mint chips with batter. Cake is done if toothpick inserted in center comes out clean. Cool cake in pan 10 to 20 minutes (tube pan 25 min). Remove from pan and cool top side up.
Two 8 in (20.3cm) round layers - 35-40 min.
Two 9 in (22.9cm) round layers - 30-35 min.
One 13in x 9in (33cm x 22.9cm) pan - 35-40 min.
One 10in (25.4cm) pan or fluted tube pan - 45-55 min.
24-30 cupcakes (fill 1/2 full) - 20-25 min.
