Directions

Wash before use.

Oyster Mushroom Farfalle with Spinach. 1/4 cup + 1 tablespoon extra virgin olive oil. 3 cloves garlic, peeled and crushed. 4 oz oyster mushrooms, chopped. 6 oz bag fresh spinach leaves (about 4 cups). 1 lb farfalle pasta, cooked. Zest of 1 lemon. Juice of lemon. 1 tsp sea salt. 1/4 tsp ground black pepper Shaved Parmesan for serving, optional. Pour 1/4 cup olive oil in small saucepan and heat until warm, do not allow to bubble or simmer. Remove from heat and add garlic. Let sit for 30 minutes, stirring occasionally. Heat remaining olive oil in large, deep skillet over medium-high. Add mushrooms and cook for 3 minutes, until tender and liquid appears. Add spinach and cook for 2 more minutes, until wilted. Stir in pasta and cook for 1 more minute. Remove from heat. Discard garlic cloves and pour oil over pasta. Add lemon zest, lemon juice, salt, and pepper. Toss to mix. Serve warm, sprinkled with Parmesan cheese.
