Enriched Corn Meal (Niacin, Reduced Iron, Thiamin Mononitrate, Riboflavin and Folic Acid).
Directions
Hush Puppies: 1 cup Atkinson's corn meal, 1/3 cup self-rising flour, 1 teaspoon salt, 1 teaspoon sugar, milk or water. Mix dry ingredients together and add water or milk to make batter thin enough to drop from end of spoon into hot fat, two inches (or more) deep. Fry until golden brown. Drain on paper towel and serve hot. Old timey hoecake: 1 cup Atkinson's corn meal, 1/4 teaspoon salt, cold water to mix. Mix meal, salt and water sufficient to handle, let stand a few minutes to see if more water is needed to spread. Have a heavy griddle greased and hot; pour on the mixture and pat out into a round cake, about one-quarter inch thick. Reduce heat and let brown, turn and brown other side. Cook 15 to 25 minutes, according to thickness. Pattie cake corn bread: 1 cup Atkinson's corn meal, 1/2 teaspoon salt. Mix above with cold water sufficient to make small patties 2 inches across and 1/4 to 3/8 inch thick. Fry patties in frying pan with about 1/4 inch of cooking oil at medium heat (about 300 degrees). When pattie browns on bottom side, tum pattie and brown other side.
