skillet beef stroganoff - ingredients: 1 carton (32 oz) beef cooking stock fc, 1-1/2 cup wide egg noodles fc, 1 lb boneless beef top sirloin steak, cut 1" thick, 1/4 tsp salt fc, 1/4 tsp pepper fc, 4 tbsp butter, divided fc, 1 (8 oz) package baby bella (cremini) mushrooms, sliced, 1 medium shallot, chopped, 2 tbsp flour fc, 1/2 cup sour cream fc, 2 tbsp fresh parsley, finely chopped. Preparation instructions: pour 3 cups stock into a medium saucepan; Bring to a boil. Add noodles to stock; Boil gently 10 minutes. Drain noodles, do not rinse. Meanwhile, cut beef, across the grain, into 1/4" thick by 3" long slices; Season with salt and pepper. Melt 2 tbsp butter in a large skillet. Cook half the beef strips over medium heat until browned, being careful not to burn butter. Remove beef strips to a plate. Repeat with remaining beef strips.
