Chocolate cranberry & pecan oatmeal cookies - ingredients: 1/2 cup (1 stick) butter fc, 1/2 cup vegetable shortening fc, 1 cup brown sugar fc, 1/2 cup sugar fc, 2 eggs fc, 1-1/2 tsp vanilla fc, 1-1/2 cups flour fc, 1 tsp baking soda fc, 1 tsp salt fc, 2 cups quick or old fashioned oats fc, 1 (10 oz) package bittersweet chocolate chips fc, 1 cup dried cranberries fc, 1 cup pecans, chopped fc, cooking directions: preheat oven to 350°f. In large bowl of electric mixer, place butter, shortening, brown sugar and sugar; Beat until well blended. Add eggs and vanilla, beat thoroughly. In medium bowl, combine flour, baking soda and salt; Stir into butter mixture. Stir in oatmeal until blended; Fold in chips, cranberries and pecans. Drop by heaping tablespoons onto greased or parchment lined baking sheets. Bake for 15 to 17 minutes. Cool completely on wire racks. Makes 3-1/2 dozen 2-1/2 inch cookies , fc=food club brand
