chicken noodle soup - ingredients: 2 tbsp butter, 1 lb boneless, skinless chicken breasts, 2/3 cup chopped onion, 1 large clove garlic, minced, 2 (32 oz each) cartons big y chicken cooking stock, 1-1/2 cup sliced carrot, 1 cup sliced celery, 2 sprigs fresh rosemary, 2 cups dry egg noodles, salt & pepper to taste, 1/4 cup chopped fresh parsley, directions: melt butter in large stockpot; Add chicken and brown on all sides. Add onion and cook until soft, about 5-7 minutes. Stir in garlic, cook 2 minutes longer. Add stock, carrots, celery and rosemary, bring to boil. Reduce heat to low, cover and simmer 40 minutes. Remove chicken to plate and allow to cool 5-10 minutes. Shred chicken into small pieces. Remove rosemary sprigs. Add chicken and noodles to pan and cook, uncovered, until noodles are tender, about 18-20 minutes. Season with salt and pepper to taste; Stir in parsley. Makes 6 servings
