Directions
Sauteed scallops over brown rice quinoa edamame & vegetables.
Step 1 - For best results, thaw scallops in refrigerator overnight. Coat saute pan with oil [oil not included]. Pan sear scallops in oil for 2-3 minutes, over medium/high heat until opaque and golden brown on both sides. Remove scallops from heat and discard oil.
Step 2 - Place brown rice, quinoa, edamame, vegetables and garlic butter in a vented, covered, microwave safe dish and microwave for 2-3 minutes on high.
Step 3 - Stir brown rice, quinoa, edamame, vegetables and garlic butter until garlic butter is spread evenly throughout.
Step 4 - Plate brown rice, quinoa, edamame, vegetables and garlic butter mixture and top with sauteed scallops.
Baked scallop and rice:
Step 1 - For best results, thaw scallops in refrigerator overnight. Coat saute pan with oil [oil not included]. Pan sear scallops in oil for 2-3 minutes, over medium/high heat until opaque and golden brown on both sides. Remove scallops from heat and discard oil.
Step 2 - Preheat oven to 375 degrees F and place brown rice, quinoa, edamame and vegetables in a small casserole dish.
Step 3 - Top with sauteed scallops and garlic butter pouch. Sprinkle with bread crumbs.
Step 4 - Bake in preheated oven for 10-12 minutes or until an internal temperature of 165 degrees F is achieved. Plate and serve!
Meal kit contains:
6 oz scallops.
8 oz brown rice, quinoa, edamame and vegetables.
2 oz garlic butter.
Optional: add your own oil and bred crumbs.
Keep frozen. Refrigerate leftovers immediately in a separate covered container or discard.
