country mix-beans gourmet - 1 lb. Medium diced ham or pork, 1 red bell pepper, diced, 2 tbsp. Butter or olive oil, 1 lg. Yellow or white onion, diced, 3.5 cups water, 1 lg. (28 oz.) can of whole tomatoes, drained, 2 tsp. Salt, 1 fresh lemon, squeezed, 1/5 tsp. Ground pepper, 2 cloves of garlic, minced, 1 special seasoning packet (included), 1. In frying pan add oil or butter. 2. Add ham or pork and brown. 3. Once browned combine water, beans and pork. 4. Cover and bring to a boil, reduce heat and simmer 1 1/2 to 2 hours or until beans are tender. Simmer beans gently. Add more water if needed and stir very little to prevent breakage. 5. When beans are tender, add red pepper, onion, tomatoes, lemon juice, garlic, salt and pepper to taste and special seasoning packet. 6. Simmer for 20 to 30 minutes. Continue simmering (uncovered) if thicker consistency is desired. Makes about 10 to 12 servings.

Overnight Soak Method: In a large pot, add 8-10 cups cold water to 20 oz. of beans (about 2-1/2 cups). Let stand overnight or at least 6 to 8 hours. Drain soak water and rinse beans. To Cook: Add 7-1/2 cups of hot water to drained and rinsed beans. Simmer gently with lid tilted until desired tenderness is reached about 1-1/2 to 2 hours. Add contents of spice packet approximately 30 minutes before beans have finished cooking.
Enhanced Recipe: 30 minutes before beans finish cooking,add the following: one pound cooked ham, one can chopped tomatoes and green chilies, one chopped onion, one clove minced garlic, and contents of flavor packet.
