cranberry oatmeal cookies - makes about 4 dozen. 1 1/4 cups butter, softened, 3/4 cup firmly packed brown sugar, 1/2 cup sugar, 1 large egg, 1 teaspoon vanilla extract, 3 cups quick-cooking oats, uncooked, 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon salt, 1 teaspoon ground cinnamon, 1 cup dried cranberries, 1 12oz package our family white baking chips, divided. Beat butter at medium speed with an electric mixer until creamy. Gradually add sugars, beating well. Add egg and vanilla, beating until mixture is blended. Combine oats and next 4 ingredients; Gradually add to butter mixture, beating on low speed until blended. Stir in 1 cup of white baking chips and dried cranberries. Drop cookie dough by rounded tablespoonful onto ungreased baking sheets. Bake at 350°f for 12 minutes or until done. Let cookies cool on baking sheets 10 minutes; Remove to wire racks to cool completely. Melt remaining cup of white baking chips in the microwave (about 1 minute and stir to melt completely). Drizzle melted white baking chips over cooled cookies.
