cheesy chili mac - ingredients: 16 oz our family elbow macaroni, 1 tbsp olive oil, 1 large onion, diced, 1 green bell pepper, dicd, 1 lb lean ground beef, 2 tbsp chili powder, 1 tbsp cumin, 2 28-oz cans crushed tomatoes, 12 oz package frozen corn salt & pepper, 2 cups shredded cheddar cheese, 1/2 cup cilantro, chopped. Instructions: preheat oven to 425°f. Grease a 9"x13" baking pan and set aside. In a large skillet, heat olive oil over medium heat, cook onions and bell pepper until soft, 5 minutes. Add ground beef and cook until browned, 8 minutes. Add the chili powder and cumin, cook 1 minute more. Add the crushed tomatoes, bring to a simmer and cook for 15 minutes, stirring occasionally. Add the corn, season with salt and pepper. Meanwhile cook the pasta according to package directions and drain. Add the pasta to the skillet and toss until combined. Pour the pasta and chili mix into the baking pan and top with cheddar cheese. Bake 20 minutes or until the cheese begins to brown. Serve with the chopped cilantro.
