pepper jack chicken quesadillas - serves 8. All you need - 1/2 cup hy-vee cream of chicken condensed soup, 1/2 cup hy-vee diced tomatoes with garlic and onion, 2 tbsp hy-vee butter, divided, 4 hy-vee burrito-sized flour tortillas, 8 slices hy-vee pepper jack cheese, 8 slices hy-vee colby cheese, 1 cup shredded or cubed hy-vee cooked rotisserie chicken, divided, all you do - 1. In a medium bowl, combine cream of chicken soup and diced tomatoes. 2. Heat 1/2 tbsp. Butter in a large skillet over medium heat. Add tortilla to skillet and top with 2 slices of pepper jack cheese, 2 slices colby cheese, 1/4 cup tomato mixture and 1/4 cup rotisserie chicken. Fold tortilla in half and cook until golden and cheese is melted, turning once during cooking. 3. Repeat with remaining butter and ingredients.
warm tortillas for best results - oven: remove tortillas from package, wrap in foil. Warm at 400°f for 10 minutes. Microwave: remove tortillas from package, place between two slightly dampened paper towels. Microwave approximately 25 seconds on high.
