Melt butter in a large skillet over medium heat. Saute onion until softened, about 5 minutes. Stir in spinach. Remove from heat, and stir in rice, chicken and pimientos. 4. Combine soup, mayonnaise, cheese and curry powder; Stir into chicken mixture. Pour into prepared dish. 5. Bake for 20 minutes or until bubbly; Allow to stand 5 minutes before serving.
