chicken enchilada casserole - serves 12, all you need - 1 pound cooked shredded chicken breasts, 1 container (8 oz) hy-vee sour cream, 1 can (29 oz) hy-vee green enchilada sauce, divided, 18 (6-inch) hy-vee soft corn tortillas, divided, 1 package (8 oz) hy-vee shredded mexican cheese, divided, all you do - 1. Preheat oven to 350°f. Spray 9-by-13-inch glass baking dish with non-stick cooking spray, set aside. 2. In a bowl, combine chicken and sour cream; Set aside. 3. Pour 1 cup green enchilada sauce in the bottom of baking dish. Arrange 6 tortillas in a single layer on top of sauce. Top with 1/2 of the chicken mixture, 1/3 of the cheese and 1/3 of the remaining enchilada sauce. 4. Repeat with 6 tortillas, remaining chicken mixture, 1/3 cheese and 1/3 enchilada sauce. Top with remaining 6 tortillas and remaining enchilada sauce. Sprinkle with remaining cheese. 4. Bake, covered, 45 minutes. Uncover and bake for an additional 5 to 10 minutes. Cool slightly before serving.
