latin chipotle quinoa salad - serves 10 (1/2 cup each). All you need - 2 cups water, 1 package (8 oz) hy-vee select tri-color quinoa, 5 tbsp hy-vee select extra virgin olive oil, 3 tbsp fresh lime juice, 1-1/2 tbsp chipotle in adobo sauce (use sauce only, add chipotle for more heat), 1 tbsp hy-vee sugar (adjust to taste), 1 avocado, pitted and diced, 1 lime, juiced, 1 bunch scallions, diced, green parts only (about 1/3 cup chopped), 1/4 cup chopped fresh cilantro, 3/4 cup roasted corn, 1 roma tomato, seeded and diced, all you do - 1. In a saucepan, bring water to a boil; Stir in quinoa. Reduce to a simmer, cover and cook for about 15 minutes, or until liquid is gone; Cool. 2. For dressing, slowly whisk olive oil into 3 tbsp lime juice and adobo sauce until blended. Adjust flavor with sugar. Add dressing to quinoa and mix well. 3. Coat diced avocado with lime juice to prevent browning. Gently stir avocado, scallions, cilantro, corn and tomato into quinoa mixture. Chill before serving. Serve in a wrap, or as stuffed bell peppers or tomatoes. Add grilled chicken or shrimp, if desired.
stovetop preparation instructions - rinse hy-vee select tri-color quinoa under water, until water runs clear. Bring 2 cups water or stock to a boil, stir in 8 oz tri-color quinoa and simmer 12 to 15 minutes. Yield: about 8 half-cup servings.
