warm quinoa and corn salad - serves 4, all you need - 1 cup dry quinoa, 2 cups water, 3 tbsp, plus 1 tsp gustare vita olive oil, divided, 1 package (10.5 oz) red and yellow cherry tomatoes, halved, 3 ears corn on the cob, shucked and cut from cob, 3 garlic cloves, divided, sea salt, to taste, 1 package (0.75 oz) fresh basil, 1 package (0.25 oz) fresh chives, 1/4 whole yellow tomato, 1 tbsp fresh lemon juice, 1 package (6.5 oz) hy-vee butter salad mix. All you do - 1. Prepare quinoa with water according to package directions. 2. Meanwhile, in large skillet, heat 1 teaspoon olive oil over medium heat. Add cherry tomatoes, corn and 2 garlic cloves. Season with sea salt. Cook about 7 to 8 minutes. 3. For green sauce, in food processor, mince remaining garlic clove. Add basil and chives; Process. Add remaining 3 tablespoons olive oil, yellow tomato and lemon juice; Continue to process until smooth. Season to taste with sea salt. 4. Divide butter salad mix among 4 plates. Top each with cooked quinoa and corn mixture. Drizzle with green sauce.
