Garden sausage casserole - serves 10 (1 cup each), all you need - 1 lb italian sausage, 4 tbsp hy-vee flour, divided, 3 tbsp hy-vee butter, 1/2 cup chopped onion, 2 cloves garlic, finely chopped, 5 cups sliced zucchini, 1-1/2 cups thinly sliced fresh mushrooms, 2 cups hy-vee low-fat cottage cheese, 1/4 cup hy-vee finely shredded parmesan cheese, 2 hy-vee large eggs, 1 cup hy-vee finely shredded mild cheddar cheese. All you do - 1. Preheat oven to 350°f. Spray a 9x13-inch baking dish with nonstick cooking spray. 2. In a large skillet, brown sausage and drain. Toss with 1 tablespoon flour and scatter in prepared baking dish. 3. Return skillet to medium heat and melt butter. Saute onion and garlic until almost tender. Add zucchini and mushrooms; Saute 2 to 3 additional minutes. Remove from heat; Toss with remaining flour. Spoon half over meat. 4. In a medium bowl, whisk together cottage cheese, parmesan cheese and eggs. Pour over zucchini layer. Top with remaining zucchini mixture. 5. Bake uncovered 30 to 35 minutes. Top with cheddar cheese and bake 5 minutes longer.
