Spinach & ricotta shells - ingredients: 12 our family jumbo shells, 2 tsp olive oil, divided, 15 oz ricotta cheese, 1/2 cup grated parmesan, 8 oz frozen spinach, thawed & squeezed dry, 1/2 tsp garlic powder, 1/2 tsp cayenne pepper, 1/2 tsp dried basil, 1/2 tsp dried oregano, 1 egg, 1 lb lean ground beef or ground turkey, 24 oz jar marinara sauce, 1 cup shredded mozzarella. Instructions: preheat oven to 400°f. Lightly grease a 9 x 13 baking pan with 1 teaspoon of the olive oil. Cook pasta according to package directions, rinse under cold water, and drain. In a large skillet, cook the meat until browned and cooked through, about 10 minutes, strain off any excess grease. Add the marinara and bring to a simmer, cook for 8 minutes and set aside. In a medium bowl combine the ricotta, parmesan, spinach, garlic powder, salt, cayenne pepper, basil, oregano, and egg. Fill each shell with the spinach-ricotta filling. Place the filled shells in the baking dish. Cover with the meat marinara and top with the mozzarella. Bake uncovered for 25 minutes or until the cheese begins to brown. Serve. Serves 4

Stir gently and return to a rapid boil. Cook uncovered, stirring occasionally for 12-15 minutes, or until desired degree of tenderness is reached. Drain. For casseroles and pour-over sauces, rinse in hot water. For salads, rinse in cold water.
