Baking instructions - you will need: 1-1/2 cups mashed over-ripe bananas (approx. 4 medium/large), 2 large eggs, 1/3 cup oil (any type), 3 tbsp milk (any type), 1/2 cup chopped walnuts or chocolate chips (optional), heat oven to 350° f. Grease the bottom and sides of an 8" or 9" loaf pan. Beat the banana bread mix, oil, milk, eggs and mashed bananas in a large bowl with an electric mixer, until thoroughly combined. If desired, stir in 1/2 cups of chocolate chips and/or chopped nuts. Pour into pan. Bake 50 to 60 minutes, or until toothpick inserted into center comes out clean. Cool 10 minutes in pan, then remove and cool completely on wire rack before serving. Yield: makes 1 standard size loaf. Alternate pan size preparation: 3 mini loaf pans: 30 to 35 minutes, 12 muffins pan: 18 to 20 minutes
