4 Simple Steps: 1. Prep: Wash and dry all produce. Zest lime until you have 1 tsp; quarter lime. Halve, peel, and thinly slice onion. Mince 1/4 of the slices. Drain pineapple, reserving juice in a small bowl. In a medium bowl, combine pineapple, minced onion, and the juice from 1 lime wedge. Season with salt and peper. In a small bowl, combine 1/4 of the onion slices (you'll use the rest of the slices later), vinegar, and 1/2 tsp sugar. 2. Cook Beef: Heat a drizzle of oil in large pan over medium-high heat. Add beef, remaining sliced onion, salt, and pepper. Cook, breaking up meat into pieces, until browned and cooked through, 5-7 minutes. (Beef is fully cooked when internal temperatures reaches 160 degrees). Pour our any excess fat, leaving beef mixture in pan. 3. Add Teriyaki: Add teriyaki sauce and pineapple juice to pan with beef. Bring to a simmer, then reduce heat to medium. Cook until sauce has reduced by half, 2-4 minutes. Season with salt and pepper. 4. Finish and Serve: In another small bowl, combine sour cream, lime zest, and a squeeze of line juice. Add enough water to give mixture a drizzling consistency. (We used 1 tsp water). Wrap tortillas in a damp paper towel. Microwave on high until warm, 30 seconds to 1 minute. Divide beef among tortillas. Top with pineapple salsa, pickled onion, lime crema, and sriracha (to taste). Serve with remaining lime wedges on the side.
