Finca Allende Mingoritz is a small, south-facing 4 hectare vineyard, planted in 1964 to 100% Tempranillo at 1,600 ft. The soil is limestone-rich. Head-pruned vines are never irrigated and planted incredibly close together, increasing competition for nutrients. Plowed by mule to aerate the sandy-loam soils. Hand-picked clusters are triple-selected in the vineyard and again in the winery cluster-by-cluster and grape-by-grape. Clusters are destemmed and left uncrushed before being placed in 60-80HL open-top oak tanks for cold, pre-fermentary maceration at 8-11º C over six-to-seven days. Alcoholic fermentation is controlled at 28ºC over 21 days, with one punch down & two pump-over/day. Maceration on skins is performed during 18-21 days and wine is then pressed and racked back into stainless steel tanks for Malolactic fermentation. The finished wine is aged for 16 months underground in new French oak barrels; it is neither filtered nor fined before bottling. Mingoritz displays an intense red color with purple nuances and has aromas of herbs, balsamic, black forest fruit and soft minerals. At once silky and powerful, this wine has well-integrated tannins and an infinite finish. The 2016 vintage received 93 points from Wine Enthusiast.
