chicken cacciatore - ingredients: 1 pound boneless, skinless chicken breasts, 2 tbsp olive oil, divided, 1 medium onion, cut into wedges, 1 medium green pepper, cut into strips, 1 carton (32 oz) stater bros. Unsalted chicken broth, divided, 1 can (14.5 oz) no salt added, diced tomatoes with basil, garlic and oregano, 2 cups (6 oz) dry rotini pasta, 2 cloves garlic, minced, 1 tsp italian seasoning, 1/4 tsp pepper, 2 tsp cornstarch. Preparation instructions: cut chicken into 1-1/2 inch pieces. Brown chicken in 1 tbsp olive oil in large skillet over medium-high heat. Remove chicken to a plate; Add remaining oil, onion and green pepper to skillet. Saute vegetables 3 to 4 minutes, or until slightly tender. Return chicken to skillet; Add 3 cups broth, tomatoes with liquid, pasta, garlic, italian seasoning and pepper. Bring to a boil; Reduce heat and simmer gently 18 to 20 minutes or until chicken is cooked through and pasta is tender. Combine remaining broth and cornstarch; Stir into chicken, pasta and vegetables in skillet; Cook until thickened. Makes 4 servings
