Easy chicken enchiladas rojas: ingredients: 2-10oz cans weis quality red enchilada sauce, 2 cups cooked chicken, diced, 12 flour or corn tortillas, 2 cups shredded cheddar cheese, preferred garnish, instructions: preheat oven to 350°f. Spread 1/2 of one can of sauce on the bottom of a 9" x 11” baking pan. In a bowl combine chicken, one can of sauce, and 1 cup of cheese. Warm tortillas, a few at a time, for easier rolling. Fill each tortilla with chicken mixture, roll and place seamside down in baking dish. Top with remaining sauce and cheese. Bake 20-25 minutes until cheese and sauce are bubbly. Garnish with shredded lettuce, tomato, cilantro, sour cream, and sliced jalapenos. Makes 6 servings
