raisin pecan ice cream - ingredients: 1 cup sun-dried raisins fc, 1 cup hot water, 2 cups milk fc, 3/4 cup sugar fc, 6 egg yolks fc, 2 cups heavy cream fc, 1 tbsp vanilla extract fc, 3/4 cup pecans, chopped fc. Cooking directions: combine raisins and water in a small bowl; Let sit for 1 hour. Drain the raisins, set aside. Pour the milk into a medium saucepan and heat gently until it reaches 165°f. In a separate bowl, combine sugar and egg yolks and beat 2 minutes until the mixture is slightly thickened and smooth. Add 2 tbsp of the hot milk to the sugar and egg yolk mixture. Gradually beat in the remaining milk a half-cup at a time. Pour into a saucepan over low heat for 10 to 12 minutes stirring often until the mixture coats the back of a spoon. Do not boil. Strain the mixture through a fine mesh strainer into a large bowl. Whisk in heavy cream, vanilla and strained raisins. Cover bowl with plastic wrap and put in the refrigerator for 4 to 6 hours or until well chilled. When ready to make the ice cream, put the custard mixture into your ice cream maker along with the pecans and process as suggested by your ice cream maker's manufacturer. - Don't Replace: For items you'd rather not replace, choose "Don't replace" to get a refund if the item is out of stock.
