creamy tomato soup - ingredients: 3/4 cup chopped carrot, 3/4 cup chopped celery, 3/4 cup chopped onion, 2 tbsp extra virgin olive oil fc, 1 can (28 oz) san marzano style whole tomatoes fc, 2 cups vegetable broth fc, 1 bay leaf fc, 1/2 cup garlic and herb cream cheese fc, salt and pepper fc, cooking directions: saute carrot, celery and onion in oil in large saucepan over medium heat until soft. Add tomatoes with liquid, broth and bay leaf to pan. Lightly crush tomatoes with potato masher or large fork to break apart. Bring liquid to a boil, reduce heat and simmer 30 minutes. Remove bay leaf. Pour soup into a large blender container; Cover and process until smooth. Return soup to pan, stir in cream cheese until melted; Season with salt and pepper to taste. Makes 4 servings fc = food club brand
