Directions
Safe Handling: Keep frozen until ready to use - Once thawed, cover and store in the refrigerator. Use within 48 hours. Do not refreeze.
Ready to cook. Recommended Thawing Instructions: Remove from packaging and place in sealed, leak proof bag. Submerge in cold tap water. Change water every 30 minutes. Thaw time approximately one hour per pound of product or until tail is flexible. To Prepare: 1. Rinse defrosted tails in cold running water to clean the shell and any exposed meat. 2. It is important to detach the meat from shell to prevent from sticking when cooked. Using kitchen, shears, cut through the top of the shell down to, but not through, the tail fan. 3. Being careful not to tear the delicate flesh, run you fingertips around the inside of the shell and gently detach the meat from inside of the shell, leaving it attached at the tail fan. 4. Clean out any vein that is still in the tail, rinse the meat under cold water, and pat it dry. 5. Ensuring that the meat is still attached to the tail fan, replace the meat in the shell or lift the meat through the opening and place it on top of the shell and proceed according to your recipe. Grill: Heat the grill to medium-high. Brush the exposed meat with lemon or garlic butter. Oil the grill and place the tails meat at side down on the cooler part of the grill. Cover and cook for 3-5 minutes. Turn so that meat is now facing up, brush again and cover and cook for an additional 3-5 minutes or until meat is opaque and the shell is red. Bake: Heat the oven to 425 degrees brush the exposed meat with lemon or garlic butter. Place tails on baking sheet meat side up. Bake for 8-10 minutes or until the meat is opaque and the shell is red.
Serving Information: About 2 tails per serving. 16-20 per package.
