Directions
Sandwich Cookies: Makes 2 dozen. 1 cup unsalted soft butter or shortening. 1 tbsp vanilla extract. Confectioners sugar, for dusting. 1/2 cup granulated sugar. 2-1/2 cups extra white gold all purpose flour. 1 large egg (or egg replacer). 1/2 cup strawberry jam. Preparation: 1. In a large mixing bowl, mix butter and sugar until smooth. Stir in the egg and vanilla extract. 2. Gradually add 2-1/2 cups Extra White Gold M flour to the butter mixture and beat until combined. Shape into a flattened disk, wrap in plastic wrap, and refrigerate for 20 - 30 minutes. 3. Line a baking sheet with parchment paper. Roll out the disk between two pieces of parchment paper, or on a surface floured with gluten-free flour, until it is 1/4-inch thick. Cut out cookies with a cookie cutter. 4. Repeat step 3 with the remaining dough, only this time use a smaller round cutter to remove the center of the cookies. Arrange cookies on baking sheet and refrigerate for 15 minutes. Preheat oven to 350 degrees F. 5. Bake the cookies for 10 to 15 minutes, or until golden. Let the cookies cool. 6. Spread strawberry jam over the bottoms of the cookies and place the cookies with the holes on top, to make sandwiches. Dust with confectioners' sugar before serving. Outrageous Brownies: 16 squares. 3/4 cup semi sweet chocolate chips. 1 tsp vanilla extract. 1/2 cup extra white gold all purpose flour. 1 stick (1/2 cup) unsalted butter, cubed. 1/8 tsp salt. 1/2 cup sugar. 2 large eggs (or egg replacer). Preparation: 1. Preheat the oven to 350 degrees F. Grease an 8 x 8-inch brownie pan. 2. Melt butter and chocolate chips in a medium bowl over simmering water or use microwave. 3. Stir sugar, eggs, vanilla and salt. 4. Beat in flour, mix until blended. Pour into the pan. 5. Bake for 20 - 22 minutes or until a toothpick comes out clean. Do not over bake. Allow to cool completely.
