Griddle Fry: Pancakes

2 cups mix, 1-1/4 cups cool water** will yield (4-inch pancakes) 12 pancakes.

4 cups mix, 2-1/2 cups will yield (4-inch pancakes) 24 pancakes.

**For a richer flavor and texture, use milk or buttermilk in place of the water.

1. Heat electric griddle to 375°F or skillet over medium heat. Grease lightly with oil, if necessary.

2. Combine ingredients in a large bowl. Whisk until batter is moistened and slightly lumpy; do not overmix.

3. Pour about 1/4 cup batter onto hot griddle for each pancake. Cook about 1-1/4 minutes per side or until golden brown.

Do not eat raw batter.

Waffles

Heat lightly greased waffle iron. Whisk together 2 cups mix, 1 cup water, 1 egg and 2 Tbsp. vegetable oil until moistened and slightly lumpy. Pour desired amount of batter onto iron. Bake until steaming stops and waffles are cooked. Makes 10–12 (4-inch) waffles.

• Skillet temperatures: The skillet or griddle must be hot before making pancakes; batter will stick if it is too cool.
