Cake Mix Ingredients: Sugar, Enriched Bleached Flour (bleached Wheat Flour, Niacin, Iron, Thiamine Mononitrate, Riboflavin, Folic Acid), Vegetable Shortening ([contains One Or More Of The Following: Palm Oil, And/or Soybean Oil] With Emulsifier [propylene Glycol Mono- And Diesters, Mono- And Diglycerides, Soy Lecithin] With Preservative [bht, Citric Acid]), Modified Corn Starch, Leavening (baking Soda, Sodium Aluminum Phosphate, Monocalcium Phosphate), Contains 2% Or Less Of: Salt, Dextrose, Artificial Flavor, Xanthan Gum. Color Ingredients: Purple: Water, Sugar, Propylene Glycol, Red #3, Blue #1, Modified Food Starch, Xanthan Gum, Potassium Sorbate, Sodium Benzoate.
Directions
What you will need:
First: preheat oven to 350 degrees F. Generously grease two 8-inch (20.3 cm) round pans and dust with flour or spray with non-stick cooking spray. You will need two scoops, one for purple and one for white cake batter.
Mix: in a large bowl, combine cake mix, 1 1/3 cups water, 2 tbsp. oil, and 3 large egg whites (no yolks) until moistened. Beat 2 minutes at medium speed or 450 strokes by hand.
Tint: divide the batter into two medium bowls (approximately 2 cups of batter in each). Using a pair of scissors, carefully clip a small corner from the purple color packet. Squeeze the color packet into one bowl of batter and thoroughly mix. Save a drop or two of color for frosting, if desired. Do not tint the other bowl of batter.
Pour: start with the purple batter. Pour 1/3 cup of batter into the center of each pan and let it spread out by itself. Do not touch it once it's in the pan. Next, using another 1/3 cup (a 1/4 cup will also work) pour white batter into the center of each pan on top of the purple batter. Continue alternating and pouring batter colors and letting each scoop spread out evenly on its own. When finished, the batter surface of each pan should have circular rings of white and purple.
Bake: bake at 350 degrees F for 32-35 minutes, or until a toothpick inserted into the center of the cake comes out clean. For 9-inch pans, bake for 28-31 minutes. Cool for 10-15 minutes. Remove from pan and cool top side up.
Frost: if desired, use a drop or two from the color packet to tint your frosting purple.
Variations:
For a 13 in x 9 in (33 cm x 22.9 cm) pan: Prepare plain and purple batter as directed above. Use the same batter-pouring technique to fill a greased 13 in x 9 in. pan. Bake at 350 degrees F for 32-35 minutes.
For cupcakes: prepare plain and purple batter as directed above. Using two spoons, randomly (yet evenly) add plain and purple batter into each cupcake liner until they are about halfway full (makes 24-30 cupcakes). Bake at 350 degrees F for 21-24 minutes.
Note: this variation will not result in a striped effect.
