Just before spring holiday, our teacher gave us glass jars filled with oil and a handful of brightly colored beans. I pressed those living seeds into the dirt and when we returned a week later, we were astounded by the sight of the green shoots that had sprung forth. My sense of wonder with beans, their pleasant flavors and healthful bounty thrives on in my line of Heritage Beans. For over forty years, I have proudly partnered with farmers in the Palouse Valley of Washington and Idaho, where the very best lentils in the world are grown. The rich volcanic soil brings fourth an abundant harvest year after year, earning the region its nickname, Land of Lentils. Short of growing them yourself, these are the freshest lentils you can get! Stovetop: Sort and rinse 1 cup lentils. place in a medium pot with 3 cups water and bring to a boil. Reduce heat to medium-low and cook until tender, about 20 minutes. Add more water as needed to keep lentils covered with water while cooking. Makes 4 servings (about 3 cups). Store in a cool, dry place to preserve freshness.
