lemony grilled chicken breasts with rice medley ingredients: 1 package (6.9 oz) chicken flavored rice medley fc, 1/4 cup fresh lemon juice, 2 tsp extra virgin olive oil fc, 2 tbsp finely chopped fresh parsley, 2 cloves garlic, minced 1 tsp dried oregano fc, 1/2 tsp paprika fc, 1/2 tsp salt fc, 1/4 tsp pepper fc, 4 boneless, skinless chicken breasts, preparation instructions: place lemon juice, oil, parsley, garlic, oregano, paprika, salt and pepper in a small bowl; Whisk to blend. Place chicken breasts in a zip top plastic bag, add marinade and seal bag. Turn bag several times to coat chicken with marinade; Refrigerate at least 2 hours. Position a grill rack or broiler pan to 4 to 5 inches from heat source. Coat rack or pan with non-stick cooking spray for grilling; Preheat grill or broiler to medium-high. Prepare rice according to package directions. Remove chicken from marinade. Grill or broil chicken 10 minutes, turn and continue cooking 7 to 10 minutes longer until internal temperature reaches 165° f in the thickest part. Serve chicken with rice medley.
