apple gingersnap parfaits - you will need: 1-1/4 cup gingersnap cookie crumbs, 1/4 cup finely chopped walnuts, 3 tbsp melted butter, 1 cup heavy whipping cream, 1/3 cup confectioners sugar, 1 tsp vanilla, 1 cup greek style honey yogurt, 1 can (20 oz) food club apple pie filling, preparation instructions: preheat oven to 350°f. Combine cookie crumbs, walnuts and butter on a shallow baking pan. Bake 7 minutes, stirring after 4 minutes; Cool completely. Remove 1/4 cup crumbs to a small bowl and reserve. Beat cream with sugar and vanilla in large bowl with electric mixer at low speed until slightly thickened. Increase speed to medium and beat until cream holds slightly stiff peaks, do not over beat. Fold yogurt into whipped cream. Reserve 2/3 cup cream mixture. Spoon crumbs evenly into 6 serving dishes. Top with equal portions of cream then apples. Dollop spoonfuls of the reserved cream mixture over apples in each dish; Sprinkle with the reserved crumbs. Makes 6 servings.
