Ethiopia YirgacheffeEthiopia is the birthplace of coffee and Yirgacheffe her most exalted region, with its rarified altitude and unexpectedly lush climate. This is a washed coffee with ripe cherries being picked and pulped the same day. Once fermentation loosens the sweet flesh, the beans are rinsed clean and dried in the sun on raised beds.
