For your protection follow these handling instructions: Keep refrigerated or frozen. Thaw in refrigerator or microwave. Keep raw meat and poultry separate from other foods. Wash working surfaces (including cutting boards), utensils, and hands after touching raw meat or poultry. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard.

For Oven: Place on a roasting pan bacon side up. Tent with foil. Roast in a preheated 350 degrees F oven for 34-51 minutes until internal temperature reaches 155 degrees F. Remove foil during last 5 minutes of cooking to brown. Remove from oven and let the filet stand for several minutes before slicing. Ovens vary. Adjust cooking time accordingly. For Grill: Preheat grill to low heat. Place filet on foil on grate bacon side up over indirect, medium heat. Grill until internal temperature reaches 155 degrees F. Turn periodically to prevent burning. Remove from grill and let the filet stand for several minutes before slicing. Grill temperatures vary. Adjust cooking time accordingly.
