Preparation Instructions: Makes 24 cookies. For Drop Cookies You Will Need: 1 package Simple Truth Plant Based Sugar Cookie Mix. 1/3 cup plus 2 Tbsp neutral tasting oil. 1/4 cup plus 2 Tbsp water. For Cut-Out Cookies You Will Need: 2 Tbsp gluten-free flour. 1 Package Simple Truth Plant Based Sugar Cookie Mix. 1/3 cup plus 2 Tbsp neutral tasting oil. 1/4 cup plus 2 Tbsp Water. Cookie cutter (s). To Make Soft-Baked Drop Cookies: Position a rack in the center of the oven and heat the oven to 350 degrees F. Pour the entire bag of mix into medium bowl. Add oil and water. Stir until a soft dough forms. Drop heaping teaspoons of dough 2 inches apart on an ungreased cookie sheet. Bake 12 to 15 minutes until cookies are golden brown at the edges. Rotate the cookie sheet halfway through the baking time. Let the cookies cool for one minute on the baking sheet. Use a thin spatula to transfer cookies to a rack to cool. Allow the cookie sheet to cool completely between batches. To Make Soft-Baked Cutout Cookies: Heat the oven to 350 degrees F. Stir flour into dry cookie mix in a medium bowl. Add oil and water. Stir until a soft dough forms. Roll dough on a floured surface until 1/4 inch thick. Cut with cookie cutter. Place cookies 1 inch apart on ungreased baking sheet. Bake 12 to 15 minutes until cookies are golden brown at the edges. Rotate the cookie sheet halfway through the baking time. Let cookies cool for one minute on the baking sheet. Use a thin spatula to transfer cookies to a rack to cool. Allow the cookie sheet to cool completely between batches. To Make Crispy Cookies: Make soft-baked drop or cutout cookies as described above and let them cool completely. Place cooled cookies on a baking sheet and bake in a preheated 300 degrees F oven for 12 to 15 minutes until cookies are golden brown all over. Transfer to a rack to cool. Do not consume raw flour, dough or batter.
