Directions
Preparation: 1. Combine soup mix with 5 cups of water in medium saucepan. Mix well. 2. Bring to a boil, stirring occasionally. 3. Add 1 can (14.5 oz) of diced tomatoes. Mix well. 4. Reduce heat and simmer for 20 minutes, stirring occasionally. Prep for Authentic Southwestern Taste: 1. Mince 3 corn tortillas. 2. Saute minced tortillas in 3 tablespoons oil for 2-3 minutes in medium saucepan. 3. Add package of soup mix and 5 cups of water. Stir well. 4. Bring to a boil. Stir occasionally. 5. Add 1 can (14.5 oz) of diced tomatoes or tomatoes w/ green chilies. 6. Reduce heat and simmer for 20 minutes, stirring occasionally. Variations (May Change Sodium Levels): Add 1 can (4.5 oz) of chunk style chicken or 5 oz of cooked chicken during the last 5 minutes of cooking. Add 1 diced, ripe avocado after cooking. Add 4 oz of shredded monterey jack cheese after cooking. If desired, serve with tortilla chips, lime wedges and/or sour cream.
