Chana dal is the most grown and used bean in all of India. They are the result of hullinh and splitting the black garbanzo bean, also known as kala chana. Without their skin they become small round yellow beans. Chana dal is usually used in thick texture purees. It is also used to make fresh chutney, and it is ground into flour (besan) which is second to wheat flour in popularity.

Directions
Basic Cooking Instructions: Wash chana dal well. In a pan add 1-1/2 cup of washed chana dal and enough water to cover them by 2 inches. Boil for 20-25 minutes. Remove from heat and set aside. In another pan heat 4 tbsp of vegetable oil on medium heat. Add 1/2 tsp of brown mustard seeds and i chopped onion. Fry until brown. Add 1 chopped tomato, fry until soft then add 2 chopped garlic clove, 1/2 inch of peeled and shredded ginger root, shredded green pepper, 1 tbsp of curry powder, sugar and salt. Then pour in chana dal from the other pan and mix well. Simmer for 5-7 minutes. Serve hot.
