Stir Fry: YOU WILL NEED: 2 tbsp. oil, divided 1 lb. chicken breast, cut into 1-inch chunks 2 tbsp. butter 1 medium onion, finely chopped 1 pkg. Chicken Tikka Masala Seasoning Mix 1 can (15 oz.) tomato sauce 1/2 cup light or heavy cream Chopped fresh cilantro (optional) DIRECTIONS: 1. HEAT 1 tablespoon of the oil in large skillet on medium-high heat. Add chicken; cook and stir 5 minutes or until no longer pink. Remove from skillet. Set aside. 2. HEAT remaining oil and butter in skillet on medium heat. Add onion; cook and stir 3 minutes or until translucent. Return chicken to skillet. Stir in Seasoning Mix and tomato sauce; cook 10 minutes or until chicken is cooked through, stirring occasionally. 3. STIR in cream. Reduce heat to low; simmer 10 minutes or until slightly thickened, stirring occasionally. Garnish with chopped cilantro, if desired. Serve with naan bread or basmati rice. Makes 6 servings. PREP TIME: 10 minutes. COOK TIME: 30 minutes.
