The Language of Yes or La Lenga d'Oc is the term that medieval folk of southern France and adjacent environs used to describe how they spoke (as opposed to La Langue d'Oil of those Northerners - a cui bit of parochialism, non?) The Language of Yes, a precursor of modern Provencal, is a window to a particular sensibility - the language of the love poetry of the troubadours! - one that esteemed passion and romance above cerebration, and most significantly expressed a deep, almost mystical love of the land. So, what's up, d'Oc The Language of Yes is the language we seek to articulate in our far-flung New World outpost, a dedication to affirmation and positivity. Great wine can only come from rignerons who love their land deeply, and whose poetry is the expression of their vinous passion. The Language of Yes wines preserve the old ways, revealing the utmost respect for the integrity of the site from which they derive. The raising of the wine is done with the lightest possible hand, allowing the natural exuberance of the vines, the grapes, the wine and the winemaker to joyously emerge, unmistakably pronouncing the Language of Yes. - Randall Grahm, July 2021. En passerillage is a technique allowing for the discreet drying of grapes, typically en souche, but in this instance, post-harvest. In the shade of the vine, we air-dry a portion of the carefully harvested fruit for several days to enhance flavor concentration, savoriness, and to lignify the grape stems, so as to impart a more refined tannic structure. The substantial percentage of whole cluster fruit and the favorable fermentation kinetics it engenders creates the conditions for a slow and gentle extraction. The dramatically cool climate of Rancho Real fosters growing conditions that accentuate the unique peppery quality of Syrah, and contributes to it's great elegance and finesse.
