Birches are slender yet supple trees that will bend down and return you to the ground when you climb them, like a fishing pole under the weight of a catch. As a young boy in Maine, our founder Matt spent his summers bending birches. Years later, he would carry that same playful spirit to his love of pancake-making, and eventually, to the brand he hoped to share with the world. After all, as Robert Frost said in his poem Birches. Ingredients
Cassava Starch, Organic Coconut Flour, Almond Flour, Eggs, Leavening (monocalcium Phosphate, Sodium Bicarbonate), Salt, Monk Fruit, Spice.
Directions
Ingredients: 5-6 Pancakes: 1 cup mix; 3/4 cup water. 12-15 Pancakes: whole bag; 1-1/2 cups water. Tip: For thicker pancakes, use slightly less water; for thinner pancakes use slightly more water. Mix your ingredients until combined. Let prepared batter sit for 2 minutes. 2. Heat your pan over medium-high heat or turn your electric griddle to 375 degrees F. 3. Lightly oil the pan or griddle. 4. Pour or scoop 1/4 cup of batter for each pancake onto your hot pan or griddle. 5. Cook 2-1/2 minutes on each side or until pancakes are golden brown. Want waffles? Mix 1 cup of mix, 3/4 cup of water, and 1 tbsp of oil. Mix until combined and let batter rest for 2 minutes. Heat up waffle iron, coat with non-stick cooking spray. Cook according to waffle iron instructions or until waffles are golden brown.
