You Will Need: 1 lb boneless, skinless chicken breasts cut in 1-inch cubes, 3 - 4 red potatoes cut in 1/2-inch cubes (about 3 cups). 1 medium red bell pepper, cut in 1/2-inch pieces. 3 Tablespoons vegetable oil. Cooks in 35 min: 1. Heat oven to 400 degrees F. 2. Place chicken and vegetable pieces in large bowl; drizzle with oil. Sprinkle with seasoning; stir well to coat. 3. Arrange pieces in single layer on sheet pan with sides (For easy clean up, line sheet pan with aluminum foil or parchment paper). Bake 35 minutes, or until chicken pieces are thoroughly cooked (greater than 165 degrees F). 4. Top with salsa verde drizzle as desired.
