Directions
You will need: Mix Packet (Included), 2 Eggs, room temperature, 1/2 cup Vegetable oil, 1/2 cup Hot tap water, Frosting packet (included), 3 oz. Cream cheese, softened. Directions: 1. Preheat oven to 325 degrees F. Line a 12 well cupcake pan with paper liners. 2. In a mixer fitted with a paddle attachment, add the contents of the Cake Mix Packet, the eggs, oil, and hot water. Blend on low speed until just combined. Scrape down the sides of the mixing bowl with a rubber spatula. Batter will be thin. 3. Let batter sit for 15 min to soften carrot pieces. 4. Divide the batter into the wells of the cupcake pan. Bake for 15 -18 minutes or until a toothpick when inserted into the center of cupcake comes out clean. 5. Cool in pan on a wire rack for about 15 min. Transfer cupcakes to a wire rack and cool completely before frosting. Frosting: 6. Empty frosting packet into bowl of an electric mixer or use a bowl and hand mixer. Combine with cream cheese. Beat on low until crumbly. Increase speed to medium, until combined, scraping sides of bowl as needed. Increase speed to high and beat for 30 seconds until light and fluffy.
