Basic Instructions: Dry chick-peas may be soaked to reduce cooking time. If soaking is desired, use one of these methods. Overnight Soaking Method: Place chick-peas in a large deep pot. Add enough water to cover chick-peas by 2 inches. Soak overnight or at least 6 to 8 hours. Drain and rinse chick-peas. Quick Soaking Method: Place chick-peas in a large deep pot. Add enough water to cover chick-peas by 2 inches. Bring to boil; boil 2 minutes. Remove from heat; cover and let stand 1 hour. Drain and rinse chick-peas. Instructions for Cooking Chick-Peas: 1 pound chick-peas; 4 quarts of water; 2 teaspoons of salt; 1/2 cup tomato sauce; 2 tablespoons olive oil; 1/4 pound of cabbage; 1/4 lb. squash; seasoning (1 small onion, 1 fresh green pepper, 1/2 tomato, 1 small sweet red pepper, 3 coriander leaves, 1/4 teaspoon oregano and 2 cloves pressed garlic). Suggest: Add 1/3 pound of pork sausage. 1. Soak chick-peas according to Rico Beans soaking method. 2. Rinse, drain and cook chick-peas in enough water 6 inches above the chick-peas, add salt to taste. When they begin to boil, cover chick-peas and cook at moderate heat until soft (approximately 1-1/2 hour). 3. Drain and add the rest of the ingredients and cook at mode3rate heat for approximately 1/2 hour. 4. Mash part of the cabbage and square to thicken sauce.
