crunchy cranberry almond biscotti - 2 cups flour, 1-1/2 tsp baking powder, 1/2 tsp salt, 1/2 cup (1 stick) unsalted butter, 3/4 cup sugar, 2 eggs, 1-1/2 tsp vanilla, 1-1/2 cup stater bros. Cranberry almond crunch cereal, 2 tsp grated orange rind, 1 cup confectioners sugar, 4 tsp orange juice, directions: preheat oven to 325° f. Combine flour, baking powder and salt in medium bowl. In large bowl, beat butter and sugar with electric mixer until light and fluffy. Add eggs and vanilla; Beat until well blended. Add flour mixture, half at a time, beating well after each addition. Add cereal and orange rind; Beat on low until combined. Divide dough in half and place on greased or parchment lined baking sheet. Shape each dough portion into a 13x2x7/8-inch log. Bake 28 to 32 minutes or until lightly browned, rotating pan halfway through baking. Cool on pan 15 minutes. Keep oven set to 325° f. Transfer baked biscotti logs to cutting board. Using a serrated knife, slice each log diagonally into 15 slices, about 3/4 inch thick. Place slices upright on baking sheets; Bake 15 to 18 minutes or until slightly dried. Cool completely on wire racks, placed over waxed paper. Combine confectioners sugar and orange juice; Spoon into a plastic bag. Cut tip off corner of bag; Drizzle glaze over cooled biscotti on rack. Allow glaze to dry before serving. Store leftovers in an airtight container. Makes 30 biscotti
