Bacon, spinach and tomato pasta - 1 package of stater bros. Whole grain rotini, 1 lb. Bacon, cut in one-inch pieces, 2 1/2 cups cherry or grape tomatoes, cut in half, 2 cups fresh corn (4 ears), 2 cups baby spinach, 3 tablespoons shredded parmesan, 1 cup parsley dressing (recipe below), or vinaigrette, cracked pepper to taste, bring water to boil in a large pot, blanch corn for 2 minutes, remove, and then cook pasta according to package directions. Cook bacon pieces until crisp, drain on paper towels. Combine and process dressing ingredients in the bowl of a food processor. Place all ingredients in a large bowl and toss to combine. Parsley dressing: mix 1/2 cup vegetable oil, 1/4 cup cider vinegar, 1 1/2 tsp lemon juice, 1/4 cup parsley, 2 tsp sugar, 1 tsp salt, 1/2 tsp dried basil, and 1/8 tsp cayenne pepper
